In-season produce is more fresh, ripe, and tastes better. When produce has been naturally ripened on the vine or the tree, and harvested at the right time, it will have significantly more flavor. This is why pineapple, for example, tastes so much better in the summer. Out of season produce is harvested early and then refrigerated so that it doesn't spoil during transportation. During this process, chilling reduces the flavor. Then, when they get to their destination, they are then often heated to artificially ripen the produce before they go onto the shelves. This reduces the flavor even further, in addition to impacting texture and taste.
2. Higher Nutritional Value
In-season produce that is consumed closer to harvesting is not only fresher, but higher in nutritional value, because their phytonutrients and and vitamins rapidly decline when stored or refrigerated for periods of time prior to consumption. This is also why in-season sourced fruits and vegetables will also appear brighter and more vibrant.
3. Cheaper
The cost of in-season produce is less because farmers are able to harvest an abundance of it. Locally sourced produce drives down the price even further because travelling expenses and storage are not required. When we buy produce that is out of season, it’s normally sourced from areas that have a different climate and are stored for long periods of time, which inflates the price.

Out of season produce is usually irradiated with chemicals to extend the shelf life.
5. Supports Your Body’s Needs
In the winter, for example, citrus is in season. These fruits are high in Vitamin C, which is a necessary nutrient for preventing colds, flu and other illnesses that are more common in the winter months. Winter vegetables tend to be more hearty and are perfect for soups, stews, and other warming meals. Summer foods provide us with extra beta-carotene, which helps protect us against sun damage, and are naturally more juicy and cooling.

Eating seasonally supports the local farms in your area. A couple easy ways to ensure you're eating local, in-season produce is by signing up for a CSA program where a local farm delivers in-season produce to your home every week. Another way is to shop at your local Farmer’s Market. Both options are incredibly convenient and serve several great purposes at once.
